Scheduling Update February 26, 2011

As you may have noticed, I’ve been posting to this blog every other day. As I figured, going back to work has caused me to not have as much time in my evenings (spending those precious moments with my little family!), so I have decided to only schedule postings for Monday, Wednesday, and Friday each week. If I find the time or am dying to share a great recipe with you, I will post and let you know. If not, watch for your regularly scheduled ‘Lil Burgher Delights entries on MWF, provided I have time to schedule them over the weekends!

Last week, I got Greg and I a Valentine’s Treat from the local GE. It was so delicious, I had to share with you all and make you jealous.

The marscapone filled chooclate covered strawberry deliciousness…Yum.


Ham and Mac Casserole February 22, 2011

In the midst of a snowstorm, I had my husband start dinner. Little did I know it would take 3 hours for me to get halfway home and give in to the drive. Lucky him, he got to make and enjoy this quick and easy casserole from Kraft’s new Homestyle Macaroni and Cheese. Looks yummy, but you’ll have to take his word on that.


Ghost Pepper February 20, 2011

While browsing the Pittsburgh Public Market, we sampled various flavors of marshmallows (they really should just be called amazingness) at the Pittsburgh Marshmallow Factory’s kiosk. As you know, we came home with Dark Chocolate Marshmallow Hearts from this trip. What I failed to mention was that I also picked up a Ghost Pepper marshmallow which was appropriately labeled, “Too Hot for You!”.

Silly me held on to the marshmallow for 6 days before trying it, and I decided to do so after having nachos with salsa and hot pepper rings. Oh, and I was home alone with the kids. Since I only had my 2 year old and the phone handy to document, the photos are a little less than desirable, but you’ll get the idea. Here’s how it went down.

I opened the bag and took a sniff. Not bad, I can do this.

I pull it out of the bag and sniff again. Yup, I got this.

Lil Girl, who just ate some hot pepper rings herself, asks, “Mama, can I try? I really want to taste that ‘smello.” Sorry sweetie, this pepper won’t be so great in your tummy…

The microwave dings. I remember that I was preparing some hot chocolate, just in case. C’mon, you know you don’t need it, wuss!”

I conquer the first bite. Seriously, girl, you got this.

I chow down the second. Hmm, yeah, it does have a bit of a burn!

Time for the third. Sweet baby Jesus, 9 pounds 7 ounces, where is my &^%#$@! cocoa?”

He said throw it in, throw it in!!! Goodness this better make it better!

I take a sip. Ah, hell. A asks me, “Mama, you sad?” Is it really evident that my eyes are watering and my insides are angry?

Maybe if I take them out of the cocoa I will be ok? Take it out, now!!!

Oh no, still too much, get milk, milk will help! Not the Silk, you’ll be even worse off…and don’t you dare think about them jalapenos now, girl!

Phew, we do still have regular milk. Get it!!!

I chug it like it’s out of style. More, more!

Then for some reason, I try the cocoa again. Are you not thinking?

Consider the Ghost Pepper too hot for me. Maybe some Chocolate Bacon Cookies would help the burn?


Chocolate Bacon Cookies February 18, 2011

With both my pregnancies, I really didn’t crave anything…except for some bacon. So, I couldn’t resist when a fellow Burgh blogger posted a recipe for Chocolate Bacon Cookies. For me, it was the perfect combination of salty and sweet, just what I wanted. The batch made about 5 dozen drop cookies. I am not denying that I was taste testing both the batter and the cookies throughout the process. They won’t make the Christmas Cookie list, but they are definitely something to enjoy every once in awhile.

CHOCOLATE BACON COOKIES (from @rebelliousflaw

1 1/2 c flour
1 c cocoa
1 1/2 c brown sugar
3/4 c butter (melted)
8 oz semi-sweet chocolate
3 eggs (slightly beaten)
1 c chocolate chips
1/4 c bacon bits
1/4 c milk

Preheat oven to 350
Mix together flour, cocoa, and brown sugar
Melt butter
Melt semi-sweet chocolate
Add melted butter and melted chocolate to dry ingredients
Mix well
Add eggs and mix well
Beat in chocolate chips and bacon bits
Add milk to dough as needed to make it of a ballable/droppable consistency
Using a cookie scoop, drop cookies on parchment paper lined baking sheet
Sprinkle tops of cookies with a pinch of salt
Bake approximately 10 minutes


Fried Goodness February 16, 2011

A few episodes ago on “The Jersey Shore”, DJ Pauly D joked to a guy crushin’ on Snooki that he needed to deliver flowers with fried pickles. Thank goodness we were able to get some nice sliced fried pickles at Buffalo Wild Wings last week; however, fried pickles are a treat that I really love and I needed more!

Thanks to the Food Network, I found this recipe and adapted it by substituting the ground red pepper with creole seasoning. There was PLENTY of flour to go around, so I threw some hot pepper rings into the mix, too.

Off to the deep fryer they went, and the flour was staring me down saying, “DON’T WASTE ME!”

Thankfully, I had some grilled chicken in the fridge and thought that’d be a good addition to this mid-afternoon snack turned early dinner (although crazy bad for us). I was right. What a treat! Even Arianna was able to enjoy the delights since they were made with eggs. Sadly, I have resolved to putting the deep fryer away for awhile because the whole house smells like grease (is that really such a bad thing?).

This treat was enjoyed on my last Friday of maternity leave…thank goodness I won’t have as much time to prepare a “snack” like this when I am back at work!
