My Breakfast of Champions March 19, 2011

Those of you who follow along at Lil Burghers know that I am participating in a Healthy Living Challenge at work. I have always been one who has to have a breakfast in order to function. Living healthier, I like to control my breakfasts and lunches so that I don’t have to completely give up the things I like for dinners. The past three weeks, I have relied on fat-free vanilla yogurt (store brand from my favorite local grocery store…) and bulk granola (from my favorite local grocery store’s foodie heaven). It has been a delicious and filling sweet treat for the mornings.

There just might be some chocolate chips mixed in there…you decide. 🙂

Yum! A little overpriced but so delish! We started with a great french onion soup. This is Greg’s turkey chipolte wrap. I had a spicy chicken wrap. A is enjoying really crispy chicken tenders. The ranch tastes homemade, is a lil spicy but nice. Still here, so maybe fondue smores for dessert? 😉

 

Mexican Lasagna March 11, 2011

If you haven’t noticed, I really like cooking casseroles. They are my quick, easy go-to dish after a long day at work. Tonight, Mexican Lasagna is the casserole of choice. It’s been a long week, so I am going to give you a list of foods to have on hand and a slideshow of what it took to make it. As always, enjoy!

Mexican Lasagna

Spray an 8×8 pan with cooking spray.
Brown 1 pound of ground meat.
Add taco seasonsing to the drained ground meat (returned to pan).
Add salsa (I used homemade…) to the taco meat.
Place an 8″ tortilla in the 8×8 pan.
Top tortilla with refried beans, taco meat, & cheese.
Sprinkle with hot sauce.
Top with another tortilla.
Repeat 2 times.
On 4th tortilla, spread some salsa on top and sprinkle with cheese and hot pepper rings.
Cover with foil and cook 30 minutes in a 400 degree oven.
Remove, allow to cool.

Some days just call for a dinner out. Today was one of them. Mama B has had a long week (and it is only Wednesday, folks). Off to the mall we went for a nice walk, then it was time for some Steak ‘N Shake. Ari loves her chicken and fries, but she MUST have bbq sauce to dippy. Gotta love this kid!

 

Chicken Stir Fry March 7, 2011

I promised you Monday, Wednesday, and Friday posts, but on Friday I was too exhausted to blog. On Wednesday night, I decided to try to make healthy stir “fry”. Using brown rice was my goal, but it takes way too long to cook and I was already late. Instead, I chose to use white rice, just used less of it on my plate. While the rice steamed in our handy dandy rice cooker, I threw some very delicious chicken egg rolls (4 for under 200 calories, win!) into the oven and got to “frying”.

Into the wok went Pam cooking spray, a can of chicken breast, and a bag of frozen stir fry veggies. I let that simmer (covered) for about 10 minutes on high.

Since sodium is not one my dietary concerns, I was ok to add in 2 servings of soy sauce to give the dish some flavor. The kitchen smelled absolutely delicious. I prepped my plate with the rice and the egg rolls. They look fried, but I promise you that they were baked and amazing. I didn’t dip them in anything because I didn’t need to!

And finally, the stirfry itself!

With the egg rolls, I had 2 servings total, 638 calories. BAM!

 

Filling a Freezer March 2, 2011

Thank you to my habit of loaning Uncle Sam money + our newest addition, this year’s tax refund enabled us to cross three things off our “goals list”. This was the first purchase, a stand-up freezer! Greg sure was thankful to have the guys from Lowe’s deliver it AND put it in our basement. I sure am thankful to not worry about cashing in on frozen food deals because I have plenty of room for our purchases!

Why did we want a freezer so bad when we are a small family and only two of us really eat? Well, I LOVE to coupon shop and our favorite grocery store always has specials that feed both my habit & our stomachs. When we bought our fridge for the house, we liked the drawers of the freezer, but it would fill up with food way too quick. Many times, we didn’t even keep ice in the freezer because there simply wasn’t space. This new addition lets us be get what we want when we want it…you know, like 4/$10 ice cream tubs…yum!
